Incomplete coloration

Incomplete coloration in bell peppers refers to the percentage of persistent hard green colour remaining in fruit that are supposed to be fully coloured, for example yellow/green, red/green or red/brown. The allowable percentage depends on the origin and the quality class of the peppers.
