Fungal infections and rot

Various fungal infections and types of rot can occur in peppers. The organisms responsible are almost always present on the fruit but wait for favourable conditions to infect it, such as wounds, sufficient moisture, specific temperature ranges, and a ripe or weakened fruit. It is therefore important to avoid injury and to prevent condensation or excessively high humidity, and to keep the temperature as low as possible without causing stress or weakening of the fruit.
