Off-taste due to fermentation metabolites can occur if the fruit was stored in too low oxygen levels.

In an early stage the symptoms may disappear again if the oxygen level is increased. After prolonged exposure to too low oxygen, the affected flesh has an odour of fermentation and an off-taste. The alcohol formation can lead to 'low oxygen (O2) injury.
